About the Role

The Ritz-Carlton Hotel Company, *** is seeking a Chef de Partie to join its team in Jiddah, Makkah, Saudi Arabia. This full-time position involves preparing and cooking food according to established standards, ensuring adherence to sanitation regulations, and contributing to the overall efficiency of kitchen operations.

Key Responsibilities

• Maintain adherence to all sanitation and health regulations and requirements.
• Meet with the Chef to review assignments, anticipate business levels, and discuss changes.
• Prepare ingredients for cooking, including portioning, chopping, and storing food for service.
• Continue preparation work between meal services and prepare and cook food according to recipes, quality standards, and presentation guidelines.
• Monitor food quality during preparation and test foods for sufficient cooking using tasting, smelling, or piercing methods.
• Ensure proper portioning, arrangement, and garnishing of food to be served.
• Anticipate and communicate any assistance needed during busy periods.
• Monitor food and labor costs, minimize waste, and maintain controls to meet forecasted food costs.
• Direct and assist Stewards to maximize clean-up efficiency.
• Provide new ideas and manage the department in the absence of the Chef and Sous Chef.
• Safely and appropriately use kitchen tools; wash and disinfect kitchen areas, tables, tools, knives, and equipment.
• Check and ensure the correctness of appliance and food temperatures.

Qualifications and Requirements

• 5-10 years of relevant experience in a culinary role.
• Ability to follow all company safety and security policies and procedures.
• Capability to report maintenance needs, accidents, injuries, and unsafe work conditions to management.
• Completion of required safety training and certifications.
• Maintain a clean and professional uniform and personal appearance.
• Ability to welcome and acknowledge guests according to company standards and communicate clearly and professionally.
• Capacity to support the team in achieving common goals and respond appropriately to employee concerns.
• Ensure adherence to quality expectations and standards.
• Ability to stand, sit, or walk for extended periods and move, lift, carry, push, pull, and place objects weighing up to 10 pounds without assistance.
