About the Commis I Role at The Ritz-Carlton, Jeddah

The Ritz-Carlton in Jeddah is seeking a Commis I to join their culinary team. This full-time position requires a dedicated individual with 2-5 years of relevant experience in a similar role. The Commis I will play a key part in supporting the kitchen operations and ensuring the quality of food preparation.

Core Culinary Responsibilities

The Commis I is responsible for a range of essential kitchen duties. This includes preparing special meals or substitute items as needed, and accurately regulating the temperature of cooking equipment such as ovens, broilers, grills, and roasters. You will also manage the thawing of food items by pulling them from freezer storage to the refrigerator. Ensuring proper portioning, arrangement, and garnishing of food is critical, as is maintaining food logs to monitor quality and quantity. The role involves communicating any assistance needed during busy periods and informing the Chef of excess food items that can be utilized in daily specials. Additionally, you will communicate menu specials and out-of-stock items to the Food & Beverage service staff, always ensuring the overall quality of food items meets established standards. Preparation and cooking of food must adhere strictly to recipes, quality standards, presentation guidelines, and food preparation checklists. This includes preparing cold food items.

Team Support and Operational Standards

Beyond direct food preparation, the Commis I will assist management with various human resources functions, including hiring, training, scheduling, evaluating, counseling, disciplining, motivating, and coaching employees, serving as a role model. Adherence to all company policies and safety and security procedures is mandatory. This includes reporting maintenance needs, accidents, injuries, and unsafe work conditions to management, and completing all required safety training and certifications. Maintaining a clean and professional uniform and personal appearance is essential, as is protecting the confidentiality of proprietary information and company assets. You will be expected to anticipate and address guests’ service needs, communicate clearly and professionally with others, and develop positive working relationships. Supporting team goals and responding appropriately to employee concerns are also key aspects of this role, ensuring adherence to quality expectations and standards.

Physical Requirements and Work Environment

This role requires the ability to stand, sit, or walk for extended periods. You will need to reach overhead and below the knees, which involves bending, twisting, pulling, and stooping. The ability to move, lift, carry, push, pull, and place objects weighing 25 pounds or less without assistance is necessary. Performing other reasonable job duties as requested by Supervisors is also part of the role.

Required Qualifications and Experience

  • Education: Technical, Trade, or Vocational School Degree.
  • Related Work Experience: At least 3 years of related work experience.
  • Supervisory Experience: No supervisory experience required.
  • License or Certification: None specified.
