The Role
As an Executive Sous Chef, your role is to serve the needs of the business, our guests, and our colleagues by assisting the Executive Chef in upholding high standards of food preparation and presentation while adhering to hotel and culinary guidelines.
Key Areas of Responsibilities
Culinary Operations & Quality Control
- Assist the Executive Chef in planning and directing food preparation and culinary activities.
- Ensure all dishes are prepared according to established recipes and quality standards.
- Conduct regular food tastings and quality checks to maintain consistency and excellence.
- Innovate and refine menu offerings based on seasonal ingredients, guest preferences, and industry trends.
- Oversee portion control, presentation, and waste management to maximize efficiency and minimize costs.
Leadership & Team Management
- Supervise and mentor culinary staff, providing ongoing training and professional development.
- Delegate tasks effectively to ensure smooth workflow and adherence to culinary standards.
- Foster a culture of teamwork, collaboration, and excellence within the culinary team.
- Assist in performance evaluations, staff scheduling, and conflict resolution to maintain a motivated workforce.
Operational Efficiency & Compliance
- Monitor culinary inventory, ensuring proper stock levels and minimizing waste.
- Work with procurement teams to source high-quality ingredients while maintaining cost efficiency.
- Oversee culinary equipment maintenance, ensuring all tools and machinery are in optimal condition.
- Ensure strict adherence to health, safety, and hygiene regulations, implementing best practices in food handling and sanitation.
- Conduct regular culinary inspections to identify areas for improvement and ensure compliance with local regulations.
Guest Experience & Collaboration
- Partner with F&B teams to enhance guest dining experiences through culinary creativity and excellence.
- Engage with guests for feedback and continuously improve menu offerings based on preferences and expectations.
- Collaborate with event planning teams to develop custom menus for special occasions and VIP experiences.
Financial & Administrative Duties
- Assist in budgeting, food costing, and financial planning to optimize profitability.
- Analyze culinary performance metrics and implement strategies for cost control and revenue growth.
- Maintain accurate documentation of recipes, inventory records, and compliance reports.
- Ensure all financial and administrative tasks are completed efficiently and within established guidelines.
