Responsibilities:

Conduct interviews, hire, evaluate, reward, and discipline kitchen personnel as necessary.
Orient and train kitchen team members in property and departmental rules, policies, and procedures.
Train colleagues in food production principles and practices to maintain high-quality standards.
Plan and price menus while establishing portion sizes and service standards for all menu items.
Schedule kitchen personnel in relation to business forecasts and budget constraints.
Maintain payroll records accurately.
Educate kitchen personnel on safe operating procedures for all kitchen equipment and machinery.
Establish maintenance schedules for equipment based on manufacturer's instructions.
Provide comprehensive safety training in lifting, transporting hazardous materials, chemical control, first aid, and CPR.
Instill sanitation practices among kitchen staff and establish cleaning and stock rotation schedules.
Ensure the preparation of food retains maximum nutrients and meets special dietary requests.
