About the Role

Marriott International is seeking a dedicated Chef de Partie (Hot Kitchen) to join our culinary team in Makkah, with opportunities across Makkah and Jeddah. This full-time role involves overseeing the preparation and cooking of a variety of hot dishes, ensuring adherence to the highest standards of quality and presentation. The Chef de Partie plays a crucial role in maintaining kitchen efficiency and supporting overall culinary operations.

Core Culinary Responsibilities

The primary responsibilities of the Chef de Partie include the comprehensive preparation and cooking of food items. This involves:

  • Preparing special meals or substitute items as required.
  • Regulating the temperature of ovens, broilers, grills, and roasters to ensure optimal cooking.
  • Managing food thawing processes by pulling items from freezer storage to thaw in the refrigerator.
  • Ensuring proper portioning, arrangement, and garnishing of all food items before service.
  • Preparing and cooking food strictly according to established recipes, quality standards, presentation standards, and food preparation checklists.
  • Preparing cold foods as part of the overall kitchen operations.

Operational Duties and Team Collaboration

Beyond direct culinary tasks, this role involves active participation in kitchen management and team support:

  • Communicating assistance needed during peak periods to maintain service flow.
  • Informing the Chef of excess food items that can be utilized for daily specials.
  • Notifying Food & Beverage service staff about menu specials and any out-of-stock menu items.
  • Maintaining food logs and continuously monitoring the quality and quantity of prepared food.
  • Assisting management in various human resources functions, including hiring, training, scheduling, evaluating, counseling, disciplining, motivating, and coaching employees, serving as a role model.

Professional Standards and Compliance

Adherence to company policies and professional standards is paramount for this position. The Chef de Partie is expected to:

  • Maintain a clean and professional uniform and personal appearance at all times.
  • Protect company assets and maintain the confidentiality of proprietary information.
  • Anticipate and address guests’ service needs with clear and professional language.
  • Develop and maintain positive working relationships with colleagues to support team goals.
  • Adhere to all company, safety, and security policies and procedures.
  • Report maintenance needs, accidents, injuries, and unsafe work conditions to management promptly.
  • Complete all required safety training and certifications.

Candidate Profile and Requirements

We are looking for candidates with a strong culinary background and a commitment to excellence. The ideal candidate will possess 5 to 10 years of relevant experience in a hot kitchen environment. A proven ability to manage kitchen sections, maintain high food quality, and contribute to a positive team environment is essential. Candidates must demonstrate proficiency in food preparation techniques and adherence to culinary standards.

Physical Demands of the Position

This role requires physical stamina and the ability to perform various tasks throughout the shift. Candidates must be able to:

  • Stand, sit, or walk for extended periods.
  • Reach overhead and below the knees, including bending, twisting, pulling, and stooping.
  • Move, lift, carry, push, pull, and place objects weighing less than or equal to 25 pounds without assistance.
  • Perform other reasonable job duties as requested by Supervisors.
