Job Description — Café Manager

Location: Al Khobar, Saudi Arabia
Employment: Full-time
Reports to: Owner
Monthly package: Up to SAR 5,000 total, inclusive of allowances. Package breakdown to be agreed before appointment.

Role Purpose

Lead the café’s daily operations, manage the team, improve customer experience, and increase operating profit through sales growth, consistent product quality, and effective cost control.

Key Responsibilities

Operations and Team Leadership

• Take ownership of daily opening, service, and closing operations.
• Schedule staff according to customer demand and the approved payroll budget.
• Train and supervise baristas, cashiers, and service staff.
• Maintain cleanliness, food safety, equipment readiness, and service standards.
• Resolve customer complaints and operational issues promptly.

Sales and Profitability

• Prepare and deliver an owner-approved monthly sales and operating plan.
• Monitor sales, transaction numbers, average ticket, product margins, and operating costs.
• Improve repeat visits and sales through suitable offers, product recommendations, and local business relationships.
• Coordinate social media promotions and measure their effect on sales and contribution.
• Submit weekly performance reports with corrective actions.

Purchasing, Inventory and Cash Control

• Plan purchasing within approved quantities, prices, and authority limits.
• Supervise receiving, storage, stock rotation, and stock counts.
• Monitor ingredient consumption, waste, expiry, and stock discrepancies.
• Reconcile daily POS sales, cash, refunds, discounts, and voids.
• Coordinate with the owner and accountant on expenses and financial reporting.

Menu and Product Development

• Review product performance and recommend improvements to the menu.
• Coordinate with bakers, pastry chefs, and suppliers to introduce commercially viable products.
• Maintain standard recipes, portion sizes, preparation methods, and product costing.
• Train staff to deliver consistent products.
• Hands-on bakery or pastry development skills are an advantage.

Candidate Requirements

• At least three years of café or food-service experience, including supervisory or management responsibility.
• Proven ability to lead staff and manage daily café operations.
• Practical understanding of specialty coffee, desserts, and customer service.
• Ability to use POS reports and basic Excel or Google Sheets.
• Working knowledge of recipe costing, inventory, waste control, and cash reconciliation.
• Clear communication skills and a hands-on approach.
• Previous Saudi or GCC café experience is preferred.
• Professional references and evidence of previous results are required.

Key Performance Indicators

Targets will be agreed with the owner after reviewing actual operating data.

• Monthly operating profit against the approved budget.
• Net sales, transaction count, and average ticket.
• Ingredient and packaging cost as a percentage of net sales.
• Waste, stock discrepancies, and core-product availability.
• Payroll cost and sales per paid labor hour.
• Order accuracy, preparation time, and complaint resolution.
• Daily cash reconciliation and timely reporting.
• Contribution generated by new products and promotional campaigns.

Authority and Accountability

The manager controls daily operations within the approved budget. Hiring, salary changes, major purchases, supplier commitments, and exceptional discounts require owner approval.

Selection Process

Shortlisted candidates will complete an interview, an operational and financial case exercise, and reference checks. Candidates claiming bakery or pastry skills may also complete a practical product test.
