About the Role

Courtyard by Marriott is seeking an experienced Chef de Cuisine (British) to join our team in Riyadh. This full-time position requires 5-10 years of relevant experience and holds primary accountability for the quality, consistency, and production of the restaurant kitchen. The successful candidate will demonstrate culinary talent while leading staff and managing all food-related functions within the property's restaurant.

Core Responsibilities

The Chef de Cuisine is responsible for coordinating menus, purchasing, staffing, and food preparation. This role involves working collaboratively to enhance both guest and employee satisfaction, while also maintaining the operating budget. A key focus will be ensuring that all sanitation and food standards are consistently achieved, alongside actively developing and training the kitchen team to improve overall results.

Culinary and Operational Oversight

  • Develop, design, and create new culinary applications, ideas, and menu items for the restaurant.
  • Supervise restaurant kitchen shift operations, ensuring full compliance with all Food & Beverage policies, standards, and procedures.
  • Maintain high standards for food preparation, handling, and correct storage.
  • Recognize and ensure superior quality in products, presentations, and flavors.
  • Plan and manage food quantities and plating requirements, including estimating daily production needs.
  • Prepare and cook various types of food, both on a regular basis and for special guests or functions.
  • Check the quality of raw and cooked food products to ensure consistent adherence to standards.
  • Determine optimal food presentation methods and create decorative food displays.
  • Ensure compliance with all applicable laws and regulations, including proper handling and temperature control for all food products.

Team Leadership and Development

  • Supervise and coordinate the activities of cooks and other food preparation workers.
  • Lead shift teams, personally preparing food items and executing requests based on required specifications.
  • Utilize interpersonal and communication skills to lead, influence, and foster mutual trust, respect, and cooperation among team members.
  • Serve as a role model, demonstrating appropriate behaviors and ensuring employees understand expectations and parameters.
  • Identify developmental needs, providing coaching, mentoring, and training to enhance knowledge and skills.
  • Ensure and maintain employee productivity levels and facilitate cross-training to support successful daily operations.
  • Manage employee progressive discipline procedures and participate in the performance appraisal process.
  • Assist as needed in the interviewing and hiring of employee team members with appropriate skills.

Financial Management and Guest Satisfaction

  • Set and support the achievement of kitchen goals, including performance, budget, and team objectives.
  • Understand the impact of kitchen operations on overall property financial goals and manage to achieve or exceed budgeted targets.
  • Provide services that consistently exceed expectations for customer satisfaction and retention.
  • Manage day-to-day operations, ensuring quality standards and meeting customer expectations daily.
  • Improve service by communicating guest needs to individuals and providing guidance, feedback, and coaching.
  • Handle guest problems and complaints effectively, and interact with guests to obtain feedback on product quality and service levels.

Requirements and Workplace Standards

  • A minimum of 5-10 years of culinary experience, preferably in a leadership role within a restaurant kitchen.
  • Demonstrated culinary expertise and a strong understanding of food preparation, quality, and presentation.
  • Proven leadership abilities with strong interpersonal and communication skills.
  • Ability to advocate for sound financial and business decision-making, demonstrating honesty and integrity.
  • Commitment to company safety standards, including effective investigation, reporting, and follow-up on employee accidents.
  • Strong analytical skills to evaluate information, choose optimal solutions, and solve problems.
