About the Chef de Partie Role

Marriott International is seeking a full-time Chef de Partie to join the Food and Beverage & Culinary team. This non-management position is based in Makkah, with responsibilities extending to operations in Jeddah. The role is critical for preparing special meals, ensuring consistent food quality, and actively supporting overall kitchen operations in adherence to company standards.

Key Culinary Responsibilities

• Prepare special meals or substitute items as required.
• Regulate the temperature of ovens, broilers, grills, and roasters to ensure proper cooking.
• Manage food thawing processes by transferring items from freezer storage to the refrigerator.
• Ensure proper portioning, arrangement, and garnishing of all food items.
• Prepare and cook food strictly according to established recipes, quality standards, presentation guidelines, and the food preparation checklist.
• Prepare cold food items as needed.

Operational Standards and Communication

• Maintain accurate food logs and continuously monitor the quality and quantity of prepared food.
• Communicate any assistance needed to the team during busy service periods.
• Inform the Chef of any excess food items that can be utilized for daily specials.
• Inform Food & Beverage service staff about daily menu specials and any out-of-stock menu items.
• Ensure consistent adherence to all company quality expectations and standards for food items.

Workplace Conduct and Team Support

• Follow all company, safety, and security policies and procedures.
• Report maintenance needs, accidents, injuries, and unsafe work conditions to the manager.
• Complete all required safety training and certifications.
• Maintain a clean and professional uniform and personal appearance.
• Maintain confidentiality of proprietary information and protect company assets.
• Anticipate and address guests’ service needs, communicating with others using clear and professional language.
• Develop and maintain positive working relationships with colleagues and support the team to reach common goals.
• Listen and respond appropriately to the concerns of other employees.
• Serve as a role model and assist management with aspects including hiring, training, scheduling, evaluating, counseling, disciplining, motivating, and coaching employees.
• Perform other reasonable job duties as requested by Supervisors.

Physical Demands of the Role

• Ability to stand, sit, or walk for extended periods.
• Capability to reach overhead and below the knees, including bending, twisting, pulling, and stooping.
• Ability to move, lift, carry, push, pull, and place objects weighing less than or equal to 25 pounds without assistance.

Required Qualifications and Experience

• Education: A Technical, Trade, or Vocational School Degree is required.
• Related Work Experience: Candidates must have at least 3 years of related work experience.
• Supervisory Experience: No supervisory experience is required for this position.
• License or Certification: No specific license or certification is required.
