About the Pastry Chef Role
Accor is seeking a skilled Pastry Chef to join their team in Riyadh. This full-time position involves the creation and preparation of a wide range of baked goods, desserts, and pastries, ensuring high standards of taste, texture, and presentation. The role requires leadership within the pastry kitchen, management of resources, and adherence to operational and safety guidelines.
Key Responsibilities
- Create and prepare diverse baked goods, desserts, and pastries, adhering to Fairmont standards for quality, recipes, and presentation.
- Design new recipes and innovate seasonal and themed dessert offerings.
- Oversee pastry kitchen operations, ensuring proper staffing levels and adequate supplies for all stations.
- Supervise the setup and presentation of menu items, monitoring seasonings, portion sizes, and visual appeal.
- Manage inventory and supplies for pastry operations, assisting with checking and ordering fresh and dry storage items.
- Ensure compliance with safety, hygiene, and sanitation practices in the kitchen.
- Lead and train pastry staff, maximizing employee productivity and morale, and maintaining discipline.
- Schedule staff according to business levels to enhance productivity and manage payroll costs.
- Conduct annual performance evaluations for pastry staff.
- Collaborate with other kitchen departments and foster communication between pastry production and service staff.
- Assist in managing budgetary and payroll expenses as needed.
- Respond to last-minute reservation changes by ensuring readiness and prioritizing tasks.
- Regularly confer with the Executive Chef to understand all aspects of the role and prepare to fill in as necessary.
- Understand and adhere to hotel policies regarding fire, hygiene, health, and safety regulations, and report and rectify any hazards immediately.
Qualifications and Experience
- Minimum of 5-10 years of experience as a Pastry Chef, with proven leadership experience supervising pastry teams in a high-volume hospitality environment.
- Advanced technical expertise in pastry arts, baking science, and contemporary pastry techniques.
- Demonstrated ability to develop and execute innovative pastry menus and concepts.
- Proficiency in inventory management, cost control, and financial analysis.
- Experience coordinating events, banquets, and special occasions.
- Knowledge of international pastry trends and contemporary culinary practices.
- Familiarity with halal food preparation standards and cultural requirements is desirable.
- Formal culinary qualification in pastry arts or equivalent professional training.
- Food Safety and Hygiene certification (or willingness to obtain).
- Hospitality management qualification is desirable.
- In-depth knowledge of pastry production techniques, ingredients, and equipment.
- Understanding of baking science and food chemistry.
- Expertise in menu planning, recipe development, and cost analysis.
