Job Overview
As the Cluster Executive Pastry Chef, you will report directly to the Cluster Executive Chef and be responsible for leading and inspiring the pastry and bakery operations across both Raffles and Fairmont Red Sea. Your role is vital in ensuring that all pastry products reflect the distinct brand identities and culinary philosophies of each property while upholding the highest standards of excellence, creativity, and consistency.

Key Responsibilities
  • Oversee daily pastry and bakery operations for all outlets, ensuring quality and adherence to brand standards.
  • Develop and implement standard recipes and presentation guidelines.
  • Collaborate with the culinary team to align pastry offerings with the overall vision.
  • Innovate dessert and pastry creations, balancing modern trends with traditional sophistication.
  • Ensure compliance with health, safety, and sanitation standards.
  • Lead and mentor a team of pastry chefs, identifying training and development needs.
  • Manage budgets, food costs, and evaluate performance.
  • Participate in menu engineering to enhance profitability while maintaining brand standards.
  • Support business development through creative product offerings.
  • Engage with guests to gather feedback and enhance their experiences.

Qualifications
  • Education: Degree or diploma in Culinary Arts / Pastry & Bakery or equivalent.
  • Experience: Minimum of 10 years in luxury hotels/resorts with 5 years in a senior leadership role.
  • Expertise: Advanced skills in pastry, chocolate, and artistic presentation.
  • Strong leadership, communication, and organizational skills.
  • Fluency in English; knowledge of Arabic is a plus.
