Key Responsibilities:
  • Manage and oversee all food production activities across various areas including corporate catering and restaurants.
  • Develop and execute operational plans to achieve departmental goals.
  • Prepare production schedules while adhering to recipes, hygiene, safety, and quality standards.
  • Foster strong relationships with other departments and vendors, and maintain clear communication regarding procedures and client requirements.
  • Develop contingency plans for peak periods such as Ramadan and Hajj.
  • Provide guidance on raw material selection and production processes for new projects.
  • Address customer complaints and update standard operating procedures as needed.
  • Prepare departmental performance reports and participate in planning sessions to align strategic goals.
  • Manage budgets, forecasts, and optimize use of resources.

Skills Required:
  • Menu design expertise that aligns with client specifications and nutritional standards.
  • Strong knowledge of food safety regulations including HACCP.
  • Experience in food preparation process management and cost control.
  • Proficiency in budget preparation and monitoring.

Qualifications:
  • Education in Food Science.
  • 9-10 years of general experience, 8-9 years of specialized experience in a similar role.

The Role
As a Specialty Restaurant Chef, you will assume full responsibility for the operational, administrative, and financial aspects of your assigned outlet. You will lead the culinary team in delivering exceptional dining experiences aligned with the vision of Red Sea Global Hospitality.

Key Responsibilities
  • Lead and supervise the daily kitchen operations of the outlet, ensuring quality, creativity, and consistency in all culinary offerings, with a focus on fine dining standards and guest expectations.
  • Demonstrate expertise in the specialty cuisine of the outlet, ensuring authenticity, innovation, and excellence in every dish. Prior experience in Spanish cuisine will be considered a strong advantage.
  • Develop seasonal, innovative menus that reflect the highest standards of culinary excellence using premium ingredients.
  • Ensure full compliance with Red Sea Global Hospitality's F&B policies, hygiene standards, and operational procedures.
  • Hire, train, and oversee the performance of culinary team members within the outlet, including involvement in disciplinary processes where needed.
  • Drive strong collaboration and open communication across departments to enhance guest satisfaction and operational efficiency.
  • Consistently review kitchen operations to ensure adherence to health, safety, and environmental regulations.
  • Maximize revenue and control costs through effective use of labor and materials.
  • Champion a “hands-on” leadership style, actively participating in service and team development.
  • Perform any additional duties or projects as required to support overall kitchen and business operations.

Essential Job Functions:
  • Monitor and maintain smooth operation of his/her specific area.
  • Responsible for linking all facets of service, cuisine, and entertainment.
  • Overall recruit, staff and schedule ensuring adequate staffing levels to satisfy guest needs.
  • Identify training needs & conduct training, coach team performance and monitor grooming standards.
  • Work together with the culinary & stewarding team to ensure that all food service meets and exceeds guest expectations; promote teamwork as a strong component of the daily service culture.

Qualifications/Skills:
  • Minimum 2-4 years of experience in a similar capacity.
  • Luxury five star experience necessary.
  • Previous Food and Beverage leadership experience preferred.
  • Excellent leader and trainer with strong motivational skills.
  • Strong interpersonal and problem-solving abilities.
  • Highly responsible & reliable with ability to work well under pressure in a fast-paced environment.
  • Understands international luxury travelers and their needs.

Essential Physical Abilities:
  • Endure various physical movements throughout the work areas.
  • Ability to grasp, bend, stoop, lift, push or pull heavy loads, and lift and/or carry or otherwise move materials weighing up to 75 lbs. occasionally.
  • Ability to work in a standing position for long periods of time (up to 5 hours).
