Responsibilities:- Conduct interviews, hire, evaluate, reward, and discipline kitchen personnel as necessary.
- Orient and train kitchen team members in property and departmental rules, policies, and procedures.
- Train colleagues in food production principles and practices to maintain high-quality standards.
- Plan and price menus while establishing portion sizes and service standards for all menu items.
- Schedule kitchen personnel in relation to business forecasts and budget constraints.
- Maintain payroll records accurately.
- Educate kitchen personnel on safe operating procedures for all kitchen equipment and machinery.
- Establish maintenance schedules for equipment based on manufacturer's instructions.
- Provide comprehensive safety training in lifting, transporting hazardous materials, chemical control, first aid, and CPR.
- Instill sanitation practices among kitchen staff and establish cleaning and stock rotation schedules.
- Ensure the preparation of food retains maximum nutrients and meets special dietary requests.
