Key Responsibilities:

• Prepare, cut, trim, debone, and portion meat according to restaurant or menu requirements.
• Ensure all meat cuts (beef, lamb, veal, etc.) meet our quality and presentation standards.
• Grind, mince, or marinate meats as needed for specific recipes or preparations.
• Weigh and package meat portions for service or storage.
• Maintain a clean and sanitized butchery area at all times.
• Label and store meats in designated cold rooms or refrigerators according to safety standards.

Key Responsibilities:

• Menu Development & Culinary Innovation: Research, develop, and execute a diverse burger menu, including classic and gourmet options. Innovate and test new concepts while respecting burger fundamentals.
• Kitchen Leadership & Operations: Oversee daily kitchen operations, manage inventory, maintain food costing, and implement health & safety standards (HACCP). Train and mentor your kitchen team.
• Quality & Consistency: Ensure every burger meets our standards for taste and presentation. Develop precise recipes and personally expedite during peak hours.
